Vegan Chicken Noodle Soup Recipe

This recipe is wonderful for those feeling under the weather and for the cold crispy days of the year!

What you will need:

  • 6 cups water

  • 3 tbsp. better than bouillon no chicken base

  • 1 cup finely chopped celery

  • 1 packet of angel hair pasta

  • 1 cup finely chopped carrots

  • 2 large potatoes chopped

  • ¼ pack of extra firm tofu diced in small squares or sliced into thin rectangles

  • 1 cup frozen corn (optional)

  • cilantro to garnish (optional)

How to prepare this recipe:

  1. Boil the pasta to the containers directions, wash the pasta thoroughly after it is cooked in order to remove the extra starch and set aside

  2. Boil the 6 cups of water with the no chicken base (you can add more no chicken base for an extra strong chicken flavor) and the potatoes for 10 minutes

  3. Add the rest of the ingredients after the potatoes have been boiling (excluding the pasta) for 6 minutes

  4. Add the pasta to the soup and boil for 2 more minutes

  5. Garnish with a fresh herb of your choice (optional)

  6. Feel free to add more water for a thinner soup, just remember to add more no chicken base if you do this

  7. This can be kept in the fridge for up to 5 days
